In a closed autoclave, water is heated to boil and steam is generated. The steam drives out the cold air in the pot from the exhaust valve and then closes the exhaust valve. The pressure in the pot is increased and the boiling point is increased, thereby obtaining a temperature higher than 100°C. The latent heat generated by high temperature and high pressure is used to coagulate and denature the bacterial protein, achieving the purpose of sterilization.
